Our Butternut squash and Kale Risotto is a tasty and nutritious meal packed with vegetables. Made with authentic Arborio rice for added creaminess and lots of vegetables including kale, butternut squash, leek, carrots, onion and spinach. This filling lunch is finished off with a splash of milk and crème fraiche and deliciously seasoned with parsley and garlic!

Kale and spinach are amongst the most nutrient dense food there is which means that this meal is a powerhouse of nutrition. Both are in high in vitamins A, K and C which are important for good bone health and maintaining a healthy immune system. Both are loaded with powerful antioxidants which have numerous benefits on health such as helping to prevent free radical damage.

Butternut Squash is an excellent source of dietary fibre and mono-unsaturated fatty acids. It contains no saturated fats or cholesterol, keeping your heart happy and healthy. It is also rich in protein, minerals, phytonutrients and vitamins.

Storing Instructions

Keep refrigerated under 5 degrees Celsius at all times and consume by the date shown. Suitable for freezing before use by date shown. Consume within 3 months from date of freezing.

Cooking Instructions

Microwave
Gently pierce film once. Heat in a microwave (900w) for 3-4 mins or until piping hot. Use extreme caution when hot.
Oven
Preheat oven at 150 degrees celsius (Fan Assisted) or Gas Mark 3. Do not pierce film. Place in centre of oven for 15 - 20 mins or until piping hot. Use extreme caution when hot.
