This is one chunky and filling soup! Nutty and delicious lentils and brown basmati rice in a rich tomato and spinach based soup, give this dish a big nutrition hit. Ricotta and a dash of crème fraiche make this soup a luxurious lunch!

The lentils added nutty and earthy flavour to this meal and are packed full of nutrition. They have a high fibre content which helps to lower cholesterol and helps maintain a healthy heart and digestive tract. Lentils are high in plant-based protein and will help you maintain a feeling of fullness throughout the day.

Not only do the tomatoes provide a juicy and sweet flavour to this meal but they also have amazing health benefits. Tomatoes are high in powerful antioxidants like vitamins A and C which help to neutralise harmful free radicals in the body. They also contain impressive amounts of Vitamin K, B6, potassium and magnesium and their health benefits range from improving eye sight to reducing cholesterol levels.

Brown rice is unrefined and still contains all of its natural wholeness and fibres meaning that it provides many beneficial health effects. Brown rice is rich in selenium which is important for maintaining a healthy heart as well as containing high amounts of iron, zinc and calcium.
