This Mixed Pepper & Chicken Fusilli provides a high protein twist on a traditional Italian tomato pasta. Packed full of peppers, mushrooms and chicken in a rich tomato sauce infused with red wine and creamy Parmesan cheese, garnished with a sprinkle of pine nuts - what's not to love?

The red and yellow peppers in this dish provide a sweet flavour, a crunch and a little pop of colour as well as being packed full of essential vitamins and minerals.
