This Saag Aloo Curry is a delicious vegetarian curry, packed with chickpeas and lentils and potatoes in an aromatic sauce, finished with raisins and a side of fibre rich, wholegrain brown Basmati rice. Nutty and earthy in flavour, lentils have a high nutritional value and everyone can benefit from incorporating this healthy legume into their diet!

At GourmetFuel, our Vegetarian curry recipes are packed full of flavour and cooked slowly to ensure maximum taste! Saag Aloo is one of the healthiest traditional Indian recipes, made with fresh spinach, chickpeas and authentic Indian spices. Prepared using only the freshest ingredients, this dish is full of protein, vitamins and minerals, yet low in fat, cholesterol and calories. The fibre, folic acid, and potassium in lentils and chickpeas all support heart health as well as being a great source of plant protein.

The fluffy texture of Basmati's long, slender grains offers the palate a distinctive, unique and slightly nutty flavour. Basmati rice is also a good source of various vitamins including the B Vitamins, Niacin and Thiamin! Brown Basmati has a low to medium glycemic index, meaning that energy is released at a slower, steadier rate leading to a more balanced level of energy - it's the perfect fragrant accompaniment to any curry!

This meat-free meal is a great option for vegetarians or those looking to maintain a good protein intake while eating a bit less meat or a few extra veggies!
