This healthy take on the late-night favourite is sure to leave your taste buds tingling. Packed with crunchy veg and lean protein, this dish is perfect for those looking for a satisfying and delicious lunch.

Chicken is high in protein and contains all our essential amino acids which are vital for tissue repair, muscle growth and development. It is also very high in selenium a mineral that most of us don't get enough of! Selenium is very important for human health because it helps boost immunity and plays a key role in maintaining a healthy metabolism.

The peppers in this dish provide crunch and flavour, as well as being low in calories, and loaded with great nutrition. Peppers are excellent sources of vitamin A, potassium, folic acid, fibre and gram-for-gram, they contain even more vitamin C than oranges!
