We are huge fans of Mexican food here in Gourmet Fuel and this is a winner in our eyes! Tender and flavourful chicken breast, seasoned with a coriander and fajita spice mix, served with kidney beans, red and yellow peppers all on a bed of coriander and lime Basmati rice and topped with a sprinkle of cheddar cheese and our taco sauce!


The red and yellow peppers included in this dish provide crunch and flavour, as well as being low in calories, and loaded with good nutrition. Both red and yellow peppers are excellent sources of vitamin A , potassium, folic acid, fibre and gram-for-gram, they contain even more vitamin C than oranges!

The chicken in this dish serves as a complete and high-biological value protein source, aiding in repair and maintenance of muscle and bone tissue, as well as helping with satiety levels.

The kidney beans included in this dish are also a great source of fibre-rich complex carbohydrates, and are also an excellent source of plant-based protein.

When paired with our home-made taco sauce, made with a simple blend of spices, olive oil, lemon juice and egg yolk, this dish is both delicious and nutritious!

Storing Instructions

Keep refrigerated under 5 degrees Celsius at all times and consume by the date shown. Suitable for freezing before use by date shown. Consume within 3 months from date of freezing.

Cooking Instructions

Microwave
Gently pierce film once. Heat in a microwave (900w) for 5-6 mins or until piping hot. Use extreme caution when hot.
Oven
Preheat oven at 150 degrees celsius (Fan Assisted) or Gas Mark 3. Place tray on baking tray in centre of oven for 15-20 mins or until piping hot. Use extreme caution when hot.
