This Super Veg Lasagne is one of our all-time favourites that is the perfect dinner option for pasta and lasagne lovers looking for a healthier alternative to a very popular dish. Not only is this Veg Lasagne comforting and delicious but it is also packed full of nutrients from all the different vegetables.

The combination of vegetables like tomatoes, spinach, red peppers, aubergine, carrots and mushroom make this lasagne a powerhouse of nutrition rich in phytonutrients and heart healthy fatty acids. The red cheddar and ricotta cheese along with the different herbs and spices make this a rich, comforting and flavourful dinner option at the end of the day.

Tomatoes are sweet and flavourful and are loaded with health properties. They contain all four major carotenoids, particularly lycopene, which have incredibly high antioxidant properties which is highly effective in scavenging cancer causing free radicals. Tomatoes also contain impressive amounts of Vitamin C, A and K.

Spinach is well known for its health benefits and is high in many essential vitamins and minerals. It contains high levels of chlorophyll a phytochemical that has many health promoting activities ranging from anti-inflammation to anticancer properties.

The red peppers add a sweetness and a crunch to this dish but they also contain a huge amount of your daily vitamin C which is not only a powerful antioxidant but also helps with the absorption of iron. Red peppers are a great source of Vitamin B6 and folate both important for the prevention of anaemia.

Storing Instructions

Keep refrigerated under 5 degrees Celsius at all times and consume by the date shown. Suitable for freezing before use by date shown. Consume within 3 months from date of freezing.

Cooking Instructions

Microwave
Gently pierce film once. Heat in a Microwave(800w) for 3-4 minutes or until piping hot. Use extreme caution when hot.
Oven
Preheat oven at 150 degrees celsius (Fan Assisted) or Gas Mark 2. Do not pierce film. Place in centre of oven for 15 minutes or until piping hot. Use extreme caution when hot.
