    Absolutely Delicious

Posted by Angela Blackwell on 2nd Sep 2021

Filling meal, just the right amount of garlic

This luxurious Spinach and Ricotta Gnocchi is a little indulgent treat. Italian inspired this dish is full of flavour from the variety of herbs used; creamy from the ricotta cheese with a rich, aromatic quality from the Parmesan cheese along with phytonutrients from the spinach and rocket leaves.

The potatoes from which this gnocchi is made are packed with complex carbohydrates, plenty of potassium and vitamins C and B6. The Gnocchi is served with deliciously vibrant spinach that boosts the nutrient profile of this dinner. It is a rich source of minerals, vitamins, pigments and phytonutrients which makes spinach very beneficial for human health.

It is high in potassium important in maintaining fluid and electrolyte balance in the body and magnesium important regulating blood pressure and strong bones. It is also a great source of folate, Vitamin A, B6 and C. The health benefits of spinach range from improved eye sight to anti-inflammatory and anti-cancer properties.
