Perfectly baked salmon paired with our delicious sweet potato mash and mixed greens, making this a true power dinner! The crust for this salmon is a combination of finely chopped roasted almonds and sesame seeds. It adds a wealth of flavour and texture to this already delicious dish.

Salmon is rich in protein and omega 3 fatty acids, playing an important role in heart health while the sweet potato and spinach provide a host of vitamins and phytonutrients! Salmon is an extremely nutritious food, credited with everything from extending a person's lifespan to preventing heart attacks and cancer. Not only does salmon possess one of the highest omega-3 contents, it is also packed with tons of other vitamins and minerals like vitamin D, vitamin B12, selenium and potassium.

Almonds are among the world's best sources of vitamin E as well as helping to lower cholesterol levels. While cholesterol reduction is the most celebrated health benefit of almonds, there are many other vital health benefits of almonds' nutrition. Almonds are low in saturated fatty acids, rich in unsaturated fatty acids, contain filling fibre, unique and protective phytosterol antioxidants, as well as plant protein.

Sweet potatoes are nutritious, high in fibre, very filling and have a delicious sweet taste as well as being rich in an antioxidant called beta-carotene. Beta-carotene is very effective at raising blood levels of vitamin A, helping to maintain healthy skin, nails and hair.
