This carotenoid rich dish is packed with over 250g of carrots, butternut squash and sweet potato per serving! With some added zing and nutritional benefits from coconut milk, garlic, coriander and red chilli peppers. We’ve also added some extra fibre, texture and crunch with pumpkin and sesame seeds.Carotenoids are a group of phytonutrients, including Beta Carotene which converts to Vitamin A in the body and is beneficial for eye and skin health and is a powerful antioxidant and immune booster. Gently pierce film once. Heat in a Microwave(800w) for 2 minutes or until piping hot. Use extreme caution when hot.
Preheat oven at 150 degrees celsius (fan assisted) or Gas Mark 2. Carefully remove sauce pot. Do not pierce film of the main compartment. Place in centre of oven for 10-12 minutes or until piping hot. Use caution when hot.
