    Delicious

Posted by Marian Murphy on 10th May 2021

I really enjoyed this lunch, filling and extremely tasty. Very quick to prepare . I will be ordering more of this!

This dish is served with tender and flavourful chicken breasts, mixed peppers seasoned with coriander and fajita spices, all on a bed of fresh lime and coriander infused rice. Served with kidney beans and topped with a sprinkle of cheddar cheese with our very own taco sauce on the side! One of our favourites!

The red and yellow peppers included in this dish provide crunch and flavour, as well as being low in calories, and loaded with good nutrition. Both red and yellow peppers are excellent sources of vitamin A, potassium, folic acid, fibre, and gram-for-gram, they contain even more vitamin C than oranges!

The chicken in this dish serves as a complete and high-biological value protein source, aiding in repair and maintenance of muscle and bone tissue, as well as helping with satiety levels.

The kidney beans included in this dish are also a great source of fibre-rich complex carbohydrates and are also an excellent source of plant-based protein.

When paired with our home-made taco sauce, made with a simple blend of spices, olive oil, lemon juice, and egg yolk, this dish is both delicious and nutritious!
