We've recreated a classic egg breakfast to create a delicious vegan egg-free alternative. This vibrant breakfast will set you up for the day as it is high in protein and packed full of nutrient rich veggies!

This dish uses an kombucha infused crispy tofu which is organic and non-GMO, scrambled in a mix of soy sauce, ginger and paprika, tossed together with chickpeas, tomatoes, spring onion, peppers and spinach. The tofu and chickpeas make this dish high in plant-based protein, essential for muscle repair and recovery.

Tofu, a popular vegan food derived from soy, is a useful source of high quality plant protein, providing all nine of the essential amino acids we need for muscle growth, repair and functions like immunity. Tofu also contains a unique source of isoflavones; a powerful antioxidant associated with a number of important health benefits such as reduced LDL (bad) cholesterol levels and the reduction of high blood pressure.

Loaded with dense micronutrients from the mix of tomatoes, red peppers, onions and chickpeas, this dish contributes towards enhancing energy levels, the normal functioning of the immune system and protection of cells from oxidative stress.
