My favourite salad of the bunch

Posted by Brian M. on 30th Oct 2021

Don't let the "Lunch" category fool you. This is a perfectly filling dinner option as well! A generous portion of chicken and the combination of ingredients makes for a delicious salad.

    Lovely!!!!

Posted by Barb M on 8th Feb 2021

I still prefer the Cobb Salad as there is more onions but this one is great too! I do love the quinoa and beet root and the sweet crunch from the squash. I am really wishing a lot of these salads had beans and more broccoli instead of a chicken breast!

It's doesn't get much healthier than this. This Superfood Chicken Salad with Quinoa, Pomegranate and Roasted Pumpkin Seeds is a powerhouse of flavour and nutrition!

The protein rich chicken coupled with our special vegetable packed SuperFood Salad of pomegranate and pumpkin seeds, quinoa, sweet potato and nutritious greens with a red onion balsamic dressing on the side. An incredible 23 different ingredients are used in this meal.

Chicken is a great source of lean, low-fat protein which contains essential amino acids that are the building blocks for muscle growth. It is an important source of many vitamins and minerals like vitamin B, D, A, Potassium and sodium that have numerous health benefits.

The high protein content of this meal really is perfect for people looking to build muscle, athletes or as well as those looking to lead a healthier lifestyle. Quinoa is one of the most protein rich foods there is, containing all 9 essential amino acids. It is a great source of calcium, magnesium, several B vitamins and very high in dietary fibre to help maintain a healthy digestive tract.

Pumpkin seeds may be small in size but they pack a nutrition punch. From lowering cholesterol levels to promoting good sleep pumpkin seeds contain many important nutrients. They are a good source of Vitamins K, A and B as well as being high in protein.
