Our Sweet Potato Cakes with spinach and almonds are light and fluffy with a crispy golden exterior. We've combined sweet potatoes with good ole Irish spuds to give these cakes a vibrant pop of colour and to add an extra boost of micronutrients.
These cakes are the perfect on-the-go breakfast bite filled with ground almonds for an extra crunch, spinach, fresh tomatoes, coriander and chilli for a bit of a kick.
Spinach is an excellent source of vitamin K, A, C, and folate as well as being a good source of manganese, magnesium, iron, and vitamin B2. Vitamin K is important for maintaining bone health and it is very difficult to find vegetables richer in vitamin K than spinach!
